A handful of blueberries chucked into the batter really livens up a lemon cake, the berries turn jammy when they cook and help to keep the sponge moist.
I use my standard victoria sponge recipe and add lemon zest, lemon oil & a handful of frozen blueberries, but I have found a recipe that looks similar here.

A sophisticated version of the childhood favourite ….. minus all the rubbish preservatives! I’ve sandwiched my shortbreads together using raspberry jam, but you can use strawberry jam, chocolate spread or anything that takes your fancy.
